Borek in Issaquah, layered by hand

If I could bake only one thing, it would be borek. Thin sheets of dough, layered by hand, a filling between them, baked until the top is golden and flaky. In Issaquah you will find it in our savory case on Gilman Blvd, right next to the simit.

The three boreks on our menu

  • Ground Beef Borek. The one I hand to anyone trying borek for the first time. Like all the meat in our kitchen, the beef is Zabiha halal.
  • Three Cheese Borek. For the cheese person at your table. Ask at the counter which cheeses went into today's.
  • Veggie Borek. Meatless, and the one I point vegetarians to first.

What else is in the savory case

The case changes with what I feel like baking that morning, so think of this as the usual cast, not a promise: Simit, Dill & Feta, Mozzarella Bun, Olive Bun, Pesto Mozzarella Bun, Ground Beef Bun, Sausage & Cheese Roll and the Village Wheel. If you are coming for one thing in particular, call first.

How to eat borek

Warm, with tea. In Turkey borek is breakfast food as much as anything, eaten with a glass of çay and a plate of cheese and olives. In the afternoon it goes just as well with a Turkish coffee, ground fine and simmered slowly in a copper cezve. If you want a full breakfast around it, start with our menemen.

Taking borek home, or to the office

Most of our menu is available for takeout, borek included. If you want enough for a meeting or a family table, call (425) 657-0664 in the morning, tell us how many people, and we will tell you what is in the case. Borek travels well and warms up in a few minutes in the oven at home.
